Smoked the shank using hickory pellets. Came out great.
However, we have yet to taste them. The shank was picked to be vacuum sealed after cooking, to be put in the freezer for a smokey treat come Jan or Feb in the dead of winter. If it survives that long. with out being pulled early.

Extreme beefy flavor that can be braised like short ribs or slow cook on the smoker. Either way it is fantastic. After eating you can use the bone to begin making some delicious soup.
