I have wanted this knife for over 2 years. But I couldn’t justify $300. I used to be a Henkel guy for many years. When WÜSTHOF changed their knife edge angel from the traditional 20’s to close the traditional Japanese 14 degrees, I was intrigued and tried my first ikon chef knife. Boy did they marry German and Japanese styles perfectly!! This knife if a workhorse that feels perfect in your hand. You will love this. And Cutlery and More’s customer service was amazing. The first knife I received had a small chip, which can lead to a much bigger one. They were professional and apologetic and helped me process a return quickly. And the price dropped $50!! So go for it. You’ll love this knife and use it everyday!!!
