I’m a butcher by trade and have used countless Swiss/ German knives over the years . This boning knife takes the cake as the ultimate for all of my deboning needs. I’ve used it 6 hours a day for the past week and have yet to hone the edge once . Great edge retention and quality. 10/10 would recommend.
