This is a typical Milk Street product of very high quality. This knife is serrated on one side only, which causes the cut to veer off. This is why the Milk Street bread knife is serrated on both sides, which allows it to cut a thin straight line. This knife won’t do that, even on an onion slice. A serrated knife doesn’t work well for chopping, dicing or mincing, as it doesn’t make full contact with the cutting board. One must move the blade forward and backwards to complete a cut. The standard Kichin-tan works much better as an up and down motion cuts all the way through. I’m confused about your marketing of this knife, as it would work great for cutting a bagel/muffin, for example. Also? The handle on this knife would be fabulous on the standard Kichin-tan, and other knives, specifically those that are smaller and whose surfaces are slick.
