I received my Gator just in time to use it to trim a large rib roast I had dry aged. To properly trim dry aged beef requires an extremely sharp and heay blade. The Gator performed perfectly. It has the right blend of heft while still being easy to manuver. Anyone who needs a great carving knife should have one.

Love everything about this product.
Class Act for Adding to kitchen cutlery. Razor Sharp have not used but i already know. Nust admiring thenproduct and packaging which are all 2nd to none. My surprise knife may be the best of the 3. But absolutely love them all and especially thenfinger hole.
