Hot sticks
Turned out very good. (4.5 stars maybe more accurate than the 4 I gave.) My first time. I made partial batch weighing and proportioning. I followed the recipe exactly to the gram. I used pork butt that I ground and 80% lean ground beef. As a result, I was probably on the low end of the fat content, but it was perfect for my taste. The directions are minimal. The water is a guess. I was careful not to add too much water and the consistency was perfect. The sticks were not very hot. We'll try the Jalapeno next time. The mix was very sticky. We had a bear of a time stuffing the sheep casings with a Kitchen Aid mixer/grinder/stuffer. (The stuffers are so expensive!) Our new smoker did not put out much smoke, but the taste is fine.
