First timer
I never attempted making sausage before, but after watching a few videos, I decided it was within my job description. I already had a nice grinder and smoker. I bought a meat mixer, a nice scale, some totes that fit under the grinder discharge, and a Bluetooth remote thermometer.
I bought the kit for 25 lbs and followed the box directions.
The smoking process took longer than expected, but every one gives high marks to my product.

Excellent Results for a First Timer!
Hi,
Used use the kits as per instructions with the following deviations.
1- After I mixed evening, I put the meat in the fridge overnight
2- Stuffed the following day
3- I used a Traeger smoker; super smoked at 165F, lowest temp I can achieve.
4- Smoked for 6 hours until It reached about 140ish and then increased to 175F until IT of 155 was reached.
5- I put the sausages in the refrigirator after the ice bath.
6- Ate next day, wonderful flavor and seasoning. Friends were impressed as well.
