Delicious and nice size for two servings

Excellent marbling , delicious flavor, forgiving cut. Minimal trimming needed I salted while bringing to room temperature and seared for a few minutes per side avoiding too much of a crust on this thin cut. Sliced across the grain it is my client‘s new favorite special treat.
