Haystack Saison
The first thing I need to point out is the hops that were included in the kit were insufficient for attaining the target IBUs. And no wonder: 1.4% AA. I thought the lowest were often Saaz hops which are often in the 2.5 range, but these Hersbrucker at 1.4 were the lowest I have ever seen. So more should have been included. I ended up using some US Northern Brewer hops to get the IBUs. Then there was the matter of my having failed to notice the grains were sent milled, which may explain why my efficiency was low. Apparently when I mill at home the crush is finer. So I added a pound of honey. In any case, the brew is bottled and just coming into drinkabilty. I had never tried the Saisonstein before. My impression is that it gives more funk than spice, and I do prefer more of the latter. All in all, a respectable Saison, even if not my preferred profile.
