My fave Belgian yeast
I've used 3522 Ardennes for a variety of Belgian beers and won a couple of awards with it. This time I did a Belgian Pale Ale for the first time. Fermented at 67 F for 12 days, and upped it to 69 for a day (didn't really need to do that). Went from 1.057 to 1.010 final gravity. Fully fermented and very good, enjoyed by everyone who drank it. The most mild Belgian flavors of anything I've ever done (but still clearly a Belgian), but perfectly suited to a Belgian Pale Ale.

Unique Belgian Yeast
This was a great specialty yeast used to make a Belgian Brown ale (Leffe Brun). Very active fermentation that brought the typical belgian flavors but also brought a surprising spice finish. Turned out great. Will brew again.
