Best summer sausage

This is the third time I have used this seasoning mix and recipe. I did add some mustard seed to it and it is by far the best I have ever made. Did the over night smoke method and to say the least it is perfect. Used venison, pork shoulder, and a small amount of beef to even out the meat content.

GREAT FLAVOR

Made 25 pounds venison summer sausage with 18 pounds venison, 7 pounds pork butt. Smoked with hickory and apple pellet mixture to an IT of 155 degrees. First time using encapsulated citric acid. It was great. I'm doing it this way every time. Will be buying more of this and the Blue Ribbon regular summer sausage seasoning. My two favorites for deer meat.
