The stone looks OK, although I haven't actually sharpened anything on it yet. It was fairly flat as received, but I did true and flattened one side (the side without the markings) with a diaflat flattening plate. I'll leave the other side for later (the need for some flattening of new stones is not unusual and should not be a source for concern). Service from the company was good and I appreciate the personal touches such as the note that was enclosed with the stone and the nice wrapping of the package. I would seriously consider doing business with JKI again in the future.

Fantastic service! Ended up calling to ask for assistance and John was amazing. He was able to talk me though and ended up adjust my stone selection without overselling products. With his help I am set up for success with taking the plunge into knife sharpening. It was an absolute pleasure to work with Japanese Knife Imports.

Good sharpening tool
Went to l.a. al the way from Spain. I had on my head a sharpening mid grind stone to add to my stones that was efficient and quick. Also I was looking for a 240 mm gyuto. Spend like 2 and a half hours talking to josh about all sort of kitchen stuff, food, service, kitchens, cooks, interrelations to make great restaurants... and of course knives and stones. First of all, for the knives, he will show you alllll that is in your mind, even if you cant buy it but out of cheer joy and pleasure to see what they are packing and to chefs I believe this is a beautiful moment. Just to see this and hold and learn about all sorts of materials and técnica use on each and every one of them was great experience. Its my second time in this store and the amount of info you can get here is unbelievable. So far no other store has ever done this for me (and I been thru a bunch of knives stores in Europe). Once I got the desire knive, went to the stones!. Like you go to stores and yeah You be like “I’m looking for this and for that” and people will just show you some stuff and ultimately you will choose and pay and so long. In JKI, talking about sharpening is another world. Never have I try a stone before buying, went thru 6 or 7 stones just to test them, and every doubt I had was answer (even the ones surrounding my tecnic). I have to say, for me as a chef, this was one of the most impressive parts of my trip, my special mission when I set foot in l.a. and I do believe that if you want to up your game a bit with some Japanese materials and also get a great feedback on what you are adding to your colection, this is the place for you. Very professionals, they are people who you feel they are excited about what they are doing and are very glad to serve you in whatever they can (they offer me water, food, beers, for my girl and father in law John make sure to distract them a bit from my long stay so that they would not kill me for being there a million hours). Just esplendid! Thnx for every thing and I ll be sure to go again when I come back to L.A.!!!!!
