Favorite knife

I’ve had the opportunity to try a fair share of nice gyutos recently (including Shibata and Masamoto KS), and this is by far my favorite. It glides through product, has a nice profile, very lightweight for its size, and just feels like quality. Don’t let the 270mm size intimidate you, it’s a very comfortable and useful size, especially if you’re doing a lot of prep work. Jon and JKI are an absolute pleasure to deal with as well.

Case feels great and fits my knife and cover with zero problems. Has a high quality zipper. Enough room to fit an additional knife or two as I add to my collection.
