This pepper was everything!
I recently discovered Long Pepper which was commonly used in Ancient Rome. It’s a vibrant, flavorful taste that I love.
My mom gave me a pepper grinder for Christmas. This led me down a delightful rabbit hole of peppers and spices. I ordered all of these from The Spice House. They are top notch, quality products! I can’t wait to actually cook with them!
Today we did a tasting using our mortar and pestle. I’m glad we followed AI’s insistence that we save the Sichuan for second to last followed by Sancho. 🤣 The Sancho is going to be so fun to experiment with!

Flight Order (Do Not Change)
Move from mild → intense, non-numbing → numbing.
1. White Pepper
Earthy, funky, gentle heat
2. Tellicherry Black Pepper
Classic baseline, woody, balanced
3. Kampot Black Pepper
Aromatic, slightly sweet, fruity/floral
4. Peppercorns Royale Blend
Complex mix — identify components after singles
5. Grains of Paradise
Warm, gingery, cardamom-like (not true pepper)
6. Sichuan Pepper
Citrus peel, tingling, numbing
7. Sansho Pepper (LAST)
Bright lemon, green, strongest numbing
(Anything after this is pointless)

Sensational Sancho
I ordered these because I wanted to try something new. Boy was o delighted with the wonderful lemon aromas. I crushed the peppercorns using a rolling pin and will be buying more. Brings out an incredible flavor to my pasta dishes and grilled chicken. A must try.
