So delicious and a more budget friendly way to enjoy fresh, local chicken. After thawing I cook it whole in the crock pot and serve large chunks with sides the first night, reserve the rest of the meat for a stir fry, wraps or other meal using shredded chicken for tomorrow’s meal and keep all the bones and such in the crock pot, adding a bit of celery, onion or whatever I have on hand and topping off with water, to cook on low heat overnight to create amazing broth for future soups and gravies. It’s a chicken purchase that keeps on giving!
