Eggplant Rollatini is the bomb!

I ordered from this company for the first time. The eggplant rollatini was so delicious. My husband and I had it for dinner and we woke up in the middle of the night and had leftovers because we both dreamt about how good it is!

The spinach pies ate pretty good so , the potato pancakes and eggplant rotallini will certainly also be scrumptious! Thanks! PunkPa PMM

I baked with a covering of Hunts, tomato, fired product, and a slice of Provolone cheese. Had my neighbor over for dinner. We both thought it was very good, served with sauteed mushrooms. Nice change from the everyday. Looked like I fussed more than I had.
