My eggplant is delicious. It is so convenient, only taking 10 minutes to bake and avoiding all of the usual hassle of cooking eggplants. You can use it alone for a snack, in sandwiches and in casseroles. I've recommended it to friends. My coated slices taste fresh. It is reasonably priced given that you don't need to spend all that time prepping. Normally never make eggplant because of the hassle and now am looking up new recipes.
