Lovely, high quality flour that manages a high hydration. I've baked sourdough rolls several times using around 40% of this whole grain purple wheat and 60% finely milled wheat, and it can easily hold a 90% hydration, thanks to the purple wheat flour. The purple hue this flour gives is also a nice touch, and a fun variation to the other whole grain flours I enjoy using. Always a joy to order and receive a package from Simpel Surdej/Simpel Sourdough :-D
