I have a couple other japanese knives and specifically I used a yanagiba from hatsukokoro for crudo, i love that knife and i love this one. I was using a victorianox 8inch for my work chef knife for about 5 years but figured it was time to upgrade. This gyuto is a laser, light a little blade bias on the balance and razor sharp out of the box. The simplicity of the finish alowing the super steel to patina a bit after a lot of use showing the nice patter from core steel to the stainless cladding is very attractive. I had a new guy knock it of a cutting board last night and it did chip but it could have been worse. If you want a home or work knife that isnt going to break the bank but give you precise feel and feedback this is a no brainer.
