Hatsukokoro Aokitae Gyuto 210mm

It's a great knife, but not work-horse type, need to reset it with care. Mine lost its sharpness after two weeks of daily chef work. However is easy to sharpen! I would recommend as long as you aren't looking for a do it all work-horse type knife. When it's sharpen it cuts like Lazer.

The knife is really nice the handel is really pretty it come with a slight warp but i bent it back straight that is just somthing you have to deal with with hand forged knives they arent always perfectly straight i didnt like the out of the box edge so i thinned the bevel and put a mirror polish on it then i sharpened it and it works beautifully now
