Excellent quality but a harder cheese than what I was expecting. Of course I know that the true Italian provolones are very different (more flavorful and complex) than what passes for provolone here in the US and the cheese is used somewhat differently there. Age affects how semi-hard the cheese that you receive is. The ball we received is more suitable for grating or light snacking and not as well suited to sandwiches. It is excellent though.
