Nice Flavor

Made sourdough bread with Pasta Madre made with this flour. One Lamination after the first stretch and fold. Thanks to the extensibility, it laminates very well. Slight touch of sweetness. Very delicious.

Nice strong flour

So far, I have only used this flour to feed my Lievito Madre and it has helped to make it stronger. I will eventually use it to make brioche and panettone very soon.

Initially bought this to feed my sourdough starter, then realized it’s more meant for pasta madre. Since I’d bought 8 bags, I needed to find a way to use it up. I tried it in an 88% hydration focaccia and I’ve gotta say, it was the absolute best I ever made. Not a fluke - I’ve done it multiple times since and it’s amazing! Also, I ordered ANOTHER 8 bags lol
