I’ve been making sourdough pizzas for the last few years and always had a hard time getting the right dough spring and stretching was always challenging not to tear in the dough. This flour makes it so easy to get consistent excellent results that look like the pizzas I ate in Italy. It’s a dream to work with and a dream to stretch and bake. 100% will be purchasing again
