Not Caputo but decent
I’m really used to using Caputo pizzeria, this is really similar but you will need to tweak your recipe, a splash less water and a pinch more salt and it’ll be close… since this flour mill washes the wheat in water before milling, it seems to have a more “bland” flavor to me.

Really good flour
I use several Molino Dallagiovanna flours you sell and all ball up easily and slide right in my Gozney XL. I normally use 00 flour but will be using your La Napoletana 2.0 next. If you want to make me happy start stocking Molino Nobilgrano R. Unbelievable flavor.
