Making apple cider vinegar the old fashioned way with new equipment
We had a bumper crop of apples in the orchard this year. This called for careful fermentation of the juice through hard stage and change to the slowly adding mother and air and aging for a year in a constant temperature dark back room. We were able to buy what we needed from you, Adventures in Homebrewing. Of course I only tell that the taste comes from the mix of three types of apples from mature trees in the best apple orchard in northern New Mexico.
