Wagyu Skirt Steak

I Love This

This is rapidly becoming my favorite steak of all, and it's one where the Wagyu advantage is the most pronounced. I prepare it in a pseudo-carne asada style, then grill it on my BGE. All I can say is that it's heavenly. The only problem is that my six-year-old girls love it, too, and they are developing quite the appetite now, so I have to grill two at a time if I'm going to stuff myself.
