Heritage Pancetta Tessa (Unsliced)

This pancetta has revolutionized soups and pasta sauces in our house. The richness of the fats and the well judged salt selection just bring a level up from any other pancetta I've used in the past and consistently brings an astoundingly delicious umami. Kudos. *****
