Mexico Veracruz Finca La Laja

Was my first time roasting, used a 12 inch stainless pan, first roast was 8 minutes 45s at a 6/10 heat setting on the stove, second was 13:45 at 4/10 heat setting(was aiming for City Roast). Have been getting very even roasts now by hovering around a 5 until the 9-10 minute mark, then bumping to 6-6.5 to finish off by 11-12 minutes. All while continuously stirring with a whisk, till first crack and ending within 30s-1minute after. Flavour of beans is great, would recommend. Experience with Captain's was pleasant and straightforward. Will be crunching some numbers on whether it makes sense for us to invest in a coffee roasting machine as I'll be buying a 20 lb batch next time.
