Ecuadorian beans

The beans arrived promptly and were fresh and beautiful. They are extracting in some lovely rum for the next couple of years. I was needing some tahitensis for a lighter more floral vanilla to use in pudding/cheesecake type dishes. I made a cheesecake at Christmas and put regular Madagascar in the base and some Tahitian in the sour cream topping. I was generous with both. Best cheesecake I’ve ever made! I felt so gourmet using two types of vanilla!
