Having used the espresso and classic profiles for a long while now, third wave is not only a viable, but also really convenient way to deal with water treatment at home. My equipment stays pristine, and it's one less thing to think about in the whole Brewing process. I've dabbled in mixing my own custom Waters, and while that can be fun, it's often a lot more trouble than it's worth. One downside is needing to keep a lot of distilled water around, but it's a small price to pay, truthfully!
