Very tender cut. Seared both sides in pan, finished in 250 oven. Temp registered 145… might have gone a bit longer. Wife concerned about “pink” pork. Very good.

This was the most amazing steak I have ever cooked myself. Made the Chimichurri sauce and garlic alioli.

Just made the Presa Steak last weekend. Pan seared it with garlic, thyme, and rosemary. It melted in our mouth. Delicious. So superior to any store bought pork I've ever had.
