Very tender cut. Seared both sides in pan, finished in 250 oven. Temp registered 145… might have gone a bit longer. Wife concerned about “pink” pork. Very good.

Just made the Presa Steak last weekend. Pan seared it with garlic, thyme, and rosemary. It melted in our mouth. Delicious. So superior to any store bought pork I've ever had.

It was out for delivery at 1 PM in the afternoon, it did not get delivered until after 7:30 and there was no dry ice left and the salami was warm. I tried to call the carrier twice and it did not ring through. I had to reach out to the purveyor.
