As usual, I received the package and all of the Tri Tip was still frozen solid. Reversed seared the Tri Tip, then finished cooking on a very hot grill for an excellent medium rare Tr Tip!

This elk was superior. It tasted just as I remember it. Absolutely everything I have purchased from Jackson Hole Buffalo Meat Company has been extraordinary! My father hunted elk all the time. He even had my drive to the BWI Baltimore Cargo hold at midnight to pick up Elk meat! The only reason I agreed was that he guaranteed there was elk bacon!
