I am a sucker for strong hard dry cheeses- the more potent the better!! That being said, this cheese is quite the opposite. Its soft and neutral, and melts like a dream. I love it!! Its exquisite when paired with Rhapsody and extra sharp white chedder to create the most phenominal mac and cheese. I had awesome cheese dreams and woke up wanting more!!
