Makes delicious bread
I grind this on the finest setting with my Mockmill 100 and use it in the “40% whole wheat overnight” recipe in the cookbook “Flour, Water, Salt, Yeast.”
The resulting loaves have a wonderful texture and crumb and a rich but mild flavor.
