Pastured Pork Cheeks

Ordering was easy, shipment quick, product well-packed, vacuum sealed and frozen. This was my first time using pork cheek but I will definitely reorder! I slow-braised these (herbs and veg, star anise, juniper, black peppercorn, clove, jamon, spanish red wine and red wine vinegar), then strained and reduced the sauce. Served with seared octopus, red onion compote, pureed artichoke and seeweed foam. I'm making this again to work on presentation, but mostly so that I can have these beautiful morsels again!

Would like larger portions.

Great braised

Braise (or dry rubbed in crockpot!) these with some cumin, smoked paprika, balsamic vinegar, sea salt and tellicherry peppercorns and you have an amazing meal over rice!
