Christmas in the spring

Just got the Christmas ale bottled and legged can’t wait to try brewed the festivous this past weekend will be a few more weeks need to get the black sassion brewed.

Ready for the holidays

The Permafrost Wit IPA is superb, pouring foamy and with a fairly zingy IPA flavor. I did substitute the safe ale T58 with a S-05, giving the beer more citrus flavor. The beer was well-balanced (OG = 1.060; Final 1.018; 5.5% ABV) and well-liked. The hops maybe had a little pineapple and grapefruit flavors and the beer was definitely hoppy. Enjoyable in the keg. The Festivus is hidden away in a keg until Christmas Eve but I've definitely tested it, though it's not fully carbonated yet. I went easy on the orange peel and mulling spices, probably half of the recipe of each, but it's definitely still there. The sugar candy and late malt addition really make this a desert beer. ABV came in at 7.1%. I'm calling it delicious but again I'm being secretive for another ten days. As another reviewer did for himself, I divided the barley wine into two recipes because few of my friends and family drink barley wine and also I didn't want to overwhelm the family with a high-ABV beer. Both beers had substantial additions to the original ingredients, and each is turning out well while finishing up in the fermenters. About a week left on each of these prior to kegging. I think the oatmeal stout was part of this package and I brewed it up over the same time period. I'll give it five-stars either way. It was kind of dull early on in a couple of small taste tests and then sharpened up after six weeks. Really nice session beer at 4.2%. I kegged it and am just starting to serve this little beauty. All of the beers did need the time noted in the recipe notes (6 weeks) before they were fully matured. They go quickly but I'm ready with more batches already having arrived and ready to brew. As much fun as all these beers have been to make, it was a lot of work. I'm glad I keg rather than bottle (for the most part). Cheers!

Great package for Holidays

First up was the Festivus Miracle. It is different but enjoyable. The spices give it a unique winter holiday spirit. Next up is the Sasquatch Barleywine. I went a little long in the fermentation process due to a Thanksgiving Vacation. On bottling day the aroma was fantastic. The taste was great and will be wonderful after conditioning in the bottles for a few weeks. I will be starting the permafrost next. My family is not a big fan of IPA's, I am. This will be for me. I am sure it will also turn out great. Every kit I have received from Northern Brewer has always produced a great beer.
