Wild Boar Boneless Shoulder Roast

I loved working with Chicago Game and Gourmet. They were so helpful on the phone and deliver went smoothly. And the wild boar shoulder itself was absolutely amazing. My fiance braised it perfectly and made a traditional Italian ragu to go with it. We got boar in the first place to pair perfectly with a Brunello di Montalchino, which worked absolutely beautifully.
