Poutine 'curds' Kit

Hi, my first trial was great and very tasty. I only have one question. The curds stayed quite soft and I would love them to be a bit more consistent (hard). What step I did wrong or should I had more of a certain product? Thank you

Ceci n'a malheureusement rien à voir avec le vrai fromage en grain. Cela donne un résultat très décevant.

Everything worked excellently. Very minor editorial differences between the online video and the written instructions. Wished we’d pressed the curds harder for a more “store bought”consistency but we’ll change that on use #2.
