I love TM 81 Starter
I love this Culture becuse produce fast acidification, good flavor and aroma in the Cheese.

Good flavor everytime
I switched to tm81 for provolone and mozzarella cheeses because it works rapidly and i can use less culture. The flavor is not sacraficed, and in fact is enhanced. We use raw milk in typically 4 gallons batches with near 100% $uccess

Perfect for mozzarella
Great culture! Using for mozzarella. Giving a consistent result. Using half of the recommended dosage as using vat-pasteurized milk.
