SafAle T-58 Ale Dry Yeast

I'm a total newbie. I got 2 packets of the SafAle T-58 to use with some milled grain I also purchased from Midwest. I needed enough yeast for 8 x 1 gallon batches. 2 packets is 10 x 1 gallon batches. I'm measuring the yeast out 2.3 grams or a bit more at a time and closing by folding and clipping the rest and storing it in the fridge. I'm pitching way too high (at 86F) and the stuff just works. Three batches done. Five to go.
