Damage but good

Trees arrived looking very healthy. Unfortunately the pots didn't have any dirt but that was because of UPS throwing boxes without any consideration. Hopefully they survive.

Leaves all fell off. Is that normal?

I have been watering every day and leaving the fruit tree in the sun during the daylight hours. I bring it in at night so the cooler temperatures don’t affect it. All the leaves fell off and the grafted portion of the tree lost all the branches the leaves were on. I have not planted it yet. Will it come back? And how long should it wait before planting?
