Just Incredible
The 45-day dry aged porterhouse is my go to steak. In the interest of transparency I reverse seared this because I was out of lump charcoal for my BGE. I went too long and it was more medium+ than medium rare, but the quality of the beef with the dry aging is so great that the steak was still phenomenal. My wife won’t do much pink in her steak so at least she was able to try this one and was shocked at the difference in taste (better) than her filet, which she was already raving about. Second picture is sliced and topped with balsamic baby portobello mushrooms and sprinkled rose gold salt on it.
