Ate the 45 day boneless perfectly medium rare reversed seared. Served with salt and pepper and a dollop of freshly ground wasabi. Beautiful marbling. Subtle lingering aged flavors with every bite. While eating, I had finished the whole 16oz before I realized I had sides like vegetables and rice. :)

We have had dry-aged before, but this is the best we've had. And the price is less than most, even when we buy locally. Worth every penny!
