Love the variety of spices available
I am planning on purchasing one of every spice I am unfamiliar with and making a recipe with it. Galangal is my first. I added it to my butternut squash and vegetable soup. There were so many other flavors going on I'm not sure I could taste it. Will look for another recipe.

Hard to find, easy to use
I had tried to make a Thai recipe years ago with galangalal, but have never seen it fresh, or ground, and was so excited to see it here. I made a homemade Thai curry paste with that, lemongrass and some fresh ingredients and it was wonderful, much better than any store bought paste...which resulted in a lovely veggie Thai curry dish :)
