Best All Around Chef's Knife
I grew up in a Chinese Restaurant family and used a traditional Chinese cleaver for many years. When I started publishing cookbooks, I bought several Japanese steel knives, both carbon and stainless which I love. I wanted to buy an American made knife and discovered Town Cutler on Cutlery and More. I bought the 7.5" chopper because I waned a knife that could be used for vertical chopping, push stroke slicing, rocker mincing and detail cutting. I also wanted a knife which was a good board scoop. The chopper is better balanced than a Chinese cleaver because of the kiritsuki tip design. It has a very sharp edge, with a symmetric, 15 degree double bevel grind. Easy to sharpen since my Japanese knives have the same edge. Edge retention has been good on my Hasegawa cutting boards. As far as the cost, it is in the same price range as my Japanese knives. With the new tariffs on Japanese knives, Town Cutler is a better value. It's called a "chopper" but it is really an all around chef's knife. Highly recommended!!!
