Sea Island Red Peas have a satisfying texture I can only describe as meaty. If these are what was originally used in Hoppin’ John, then I’m not surprised the dish became a national favorite. My only complaint is the peas are more “windy” than other legumes. Next time I’m making them with some kelp to provide a wind-break!
