Great flavor in a small bean

I own and operate a New Orleans style food trailer in San Antonio Texas, called "The Cajun Cowboy". The great Northern Beans are a staple on my trailer; we serve them as a side to numerous of my main dishes, as well as refry them for my famous Boudin Tacos.
