Oh, please make these available in whole foods or availed for shipping year-round. The gingerbread and peanut butter cream sandwiches are my absolute favorite! These are perfect for a sweet tooth craving that does more than just knock that sweet tooth down. Healthy fiber content and dates make them functional too! The peanut butter cream filling reminds me of a specific birthday cake frosting my mother used to make when i was a wee lass. Almost like a peanut butter candy filling (think, buckeyes!) but with just the right amount of sweetness. The cookie is slightly firmer than the oatmeal cookie, but not quite chewy. Perfect for a cream sandwich. I'll be stocking up on these!
