Classic 6" Half Bolster Chef's Knife

I had owned a set of Wusthof knives for over 40 years. The 6 inch blade broke and Wusthof replaced it under warranty in less than 30 days. The new blade is beautiful and Wusthof will always be my pick again.

Purchased this as a warranty replacement credit of a classic ikon pairing knife. First off, hats off to wusthof customer service and warranty program. This alone would have me purchase more of their knives going forward. Regarding this knife, I bought as a general purpose utility knife and it doesn’t disappoint. Sharpness out of box was ok, but I wasn’t expecting razor sharp. The half bolster design offers very good balance and weight, and I appreciate the ability to sharpen the entire blade. After owning both this design, the classic, and classic ikon knives, I think the classic half bolster hits the sweet spot in wusthof’s lineup. Only reason for 4 stars is initial sharpness.
